These Slimming World cheese and bacon scones prove that you don't have to give up your favourite foods just because you're following a healthy eating plan.

By cutting out the butter and substituting the usual ingredients for a few lighter options, you can still enjoy the coffee shop treat without impacting your weight loss.

So how exactly do these scones measure up in terms of taste?

There's a farm shop cafe not too far from where I live that sells the most amazing cheese scones that I've ever encountered. They serve them with lashings of Lurpak butter, a few chunks of real cheese, and a beautiful homemade onion chutney. They're the stuff of dreams, truly.

You might think that I'm about to tell you that these slimming friendly scones give them a run for their money, but I'm not going to insult your intelligence or give you unrealistic expectations.

These scones right here have just 2.5 Syns each, whereas their Marks & Spencer bakery counterparts, for example, come in at a whopping 16 Syns each.

You don't make Syn savings like that without making a few compromises along the way.

These scones are tasty and satisfying, they're a really decent substitute for the real thing, and I reckon that if you were to serve them to your family, they might not even notice that they're a lighter version.

Still though, the texture is slightly different to that of a 'real' scone. They're a little denser, less buttery, and less fluffy.

Ultimately though, we all have different tastes. Give these a go, and be sure to let me know what you think of them!

How to serve these scones

This recipe would be perfect if you had friends coming round and wanted to create a lighter afternoon tea. They're also great for snacking, and I love them with soup instead of a bread roll.

Butter isn't necessary, but if you do want to add it, make sure that you're counting the extra Syns or calories.

For a bit of a twist, consider adding a dollop of mango chutney. It works!

Low Syn Cheese & Bacon Scones

The cheese and bacon scones have just 2.5 Syns each, making them the perfect snack.

Servings: 8

Calories: 82 kcal

Ingredients

  • 40 grams cheddar cheese
  • 2 rashers bacon, chopped lean, visible fat removed
  • 100 grams Smash
  • 300 grams fat free onion & chive cottage cheese
  • 2 eggs
  • 1 tbsp baking powder
  • Salt
  • Pepper
  • Low calorie cooking spray

Instructions

  • Preheat the oven to 180 degrees

  • Add the eggs, cottage cheese, and a grind of salt and pepper to a bowl, and mix very well. Use a hand blender if you have one, or a whisk if you don't. Beat well enough so it forms a smooth paste with minimal lumps.

  • Meanwhile, fry the bacon in low calorie cooking spray until it's starting to turn brown and crispy.

  • Add the bacon, Smash, cheese, and baking powder to the cottage cheese mixture, and combine to form your scone dough.

  • Spritz a baking tray with low calorie cooking spray. Form 8 scones from your dough, and place them on the tray. Spritz well with low calorie cooking spray.

  • Bake your scones in the oven for 20 minutes, or until they're golden brown.
